For quick sails with no auto pilot here are a couple of idea/tricks

-mainsail prefeeder
-mount four blocks on the rail, two at bow and two on rail adjacent to the end of the tiller. Take a long line through bow blocks, down each rail, through the aft blocks and then tie the ends on to the tiler. Now you can steer from anywhere on deck.
-from a recent panbo.com blog entry- attach a block to the fitting the jib tack attaches to. Run a thin line from aft, through this block, and up -inside- all the hanks to the head of the sail. Now you can pull the sail down from the cockpit and have it somewhat tidy....

:: The biggest challenge I've found is hoisting and dousing
:: sails single-handed.

:: It's not much of problem when at the mooring and the
:: boat naturally heads into the wind.
::
:: But for other hoisting/dousing situations I appreciate:

:: - a reliable motor and autopilot to point upwind
:: - hanked headsails - no foil
:: - boomkicker as topping lift for boom
::
:: One mainsail is equipped with slugs on the luff so it's
:: easy for a person to hoist without having to feed
:: boltrope into track. Dousing is also easier - and safer
:: in a stiff breeze - as the luff stays attached to the
:: mast (like hanks on the jib).
